Ingredients:
- 1 pound seasoned ground sausage
- 1 medium onion, diced
- 1 (28 ounce) can stewed tomatoes
- 2 (14 ounce) cans beef broth
- 2 medium zucchini, diced or sliced (about 2 cups)
- 2 small carrots, diced
- 2 stalks celery, diced
- 4 large mushrooms, sliced
- grated Parmesan cheese for garnish
Preparation:
- Crumble and cook sausage and onion in large saucepan over medium heat until sausage is browned. Drain off any drippings.
- Add remaining ingredients except cheese; simmer, uncovered, over low heat about 40 minutes or until vegetables are tender.
- Garnish with cheese.
- Refrigerate leftovers.
