Ingredients:
- 1/4 cup mayonnaise
- 2 tbsp lime juice
- 1/2 tsp ground cumin
- 1/2 cup chopped red onion
- 1 can black beans, rinsed and drained
- 1 can whole kernal corn, drained
- 2 tbsp chopped cilantro
- 1 cup quartered grape or cherry tomatoes
- 1 tsp jalapeno pepper (optional)
Directions:
- Combine mayo, lime juice, and cumin in a bowl.
- Stir in remainder of ingredients.
- Serve chilled or at room temperature.
Special Stuff:
Meg recommends making it a little spicier by adding cayenne pepper along with the cumin or maybe add diced chilies instead of the jalapeño pepper.
